It’s so simple yet so good.
I remember my mother making us fried egg sandwiches on white bread with mustard when we would go to the drive In movies. My sisters would make brown bags full of buttered popcorn and my dad would buy soda on our way there. They had 7 kids….but they made it all work.
As we got older when we would get home late from a function we would take orders for a late night run for something to eat from a drive thru and my mom would say…”no thank you, I am just going to make a Fried Egg sandwich”. Till this day she appreciates the simple foods over fancy take out or even going out. And I find…I am getting that way too as I am getting older.
I just made myself one a few hours ago. Toasted my wheat bread….put salt and pepper on my egg and butter on the toast. I don’t like eating a large meal late at night which is why I have snacks like nuts and seeds and cheese and ice cream sandwiches in my freezer 😀 But tonight….I wanted a Fried Egg Sandwich.
Come on…. don’t tell me you don’t enjoy them from time to time.
